The 2023 Big Bird Chardonnay was grown in the Derwent Valley in Southern Tasmania
A long, cool and dry growing season culminated with chardonnay grapes being hand picked on 12th April. The grapes were whole bunch pressed and the juice went through a natural fermentation in seasoned French oak barrels. Minimal handling was the objective.
The wine is finely structured and highlighted with bright citrus and mineral elements which are balanced by well-rounded creamy texture and soft natural acidity.

THE VINEYARD
The Chardonnay and Pinot vineyard patches selected by Dawson James were planted in 1989. Consequently vine-age plays an important part in the development of flavour and the balance of the fruit.
